Wine and Ink – Where taste meets the written word
The Stroke, the Glass, the Memory
To me, wine has always been a language. This digital space is my personal sketchbook, where written thoughts intertwine with ink drawings to etch into the mind what the palate has perceived.
From Alba to the Essence of "Gustology"
My technical journey began at the historic Enological School of Alba. Over decades, my research evolved through workshops at the University of Beaune and collaborations with masters like Vittorio Fiore. I have spent my life exploring the complexity of human perception — a sensory analysis that transcends science to become an intimate suggestion.
Academic Rigor & Global Vision
As a Swiss Confederation Professional Sommelier and lecturer at prestigious institutions such as Bocconi University and ALMA, I have shaped a vision I call "Gustology." My professional path was deeply influenced by World Champion Sommelier Giuseppe Vaccarini, who taught me the ethical values and precision required to master this art.
“My most compelling challenge today is not what is added, but what is taken away. As Nonno Raboso, I seek the essence of wine even at zero proof, proving that terroir and craftsmanship can resonate far beyond alcohol.”
Hardship and Noble Fruits
Today, my life follows new rhythms. While I no longer consume alcohol, my senses remain sharp and curious. What once flowed into the glass now flows onto paper through ink and pigment. As the vine teaches us, it is often through the greatest challenges that the noblest fruits are produced.
